What was a local barrow show back in 1973 has now become one of the premier hog shows in Ontario.
The Ontario Pork Congress kicks off its 37th annual event today in Stratford where pork producers from across the province get to showcase their product.
Ray Black is President of the Ontario Pork Congress.
He says the show is well known, and its a good place for producers to gather and exchange ideas on how to weather the ups and downs of the industry.
Black says the pork industry has gone through some rough times over the past few years, but higher prices lately have helped many producers stay in business.
Black says producers have become very savvy operators and have learned how to cut corners to make a profit, but still produce quality meat for the market place.
He says the annual Pork Congress is a place where the producers can gather and celebrate their success despite the cyclical nature of the marketplace.
The 2010 Ontario Pork Congress is taking place today and tomorrow in Stratford, where that community has declared this week “Pork Week.”
