The Canadian Mist Distillery in Collingwood is doing its part to support local corn producers.
Corn is the main ingredient in the manufacture of Canadian Rye Whiskey and the industry in Ontario uses more than 120 thousand tonnes of corn every year.
Jan Westcott is the President and CEO of Spirits Canada which represents distillers in the country.
Westcott says Canadian Mist has a policy of only sourcing Ontario grown corn.
He says the Whiskey industry is doing its part to support local corn farmers who he admits have a tough time with low prices for some time.
However, Westcott says now there appears to be a better balance in the market with the Whiskey industry demanding top quality corn and the lesser quality material being used for ethanol production.
He says while they are supporting local corn producers, the local farming industry is helping out the distillers by purchasing the distillers grain that is left over from the Whiskey process for high quality livestock feed.
Westcott says not many people realize that corn is the main ingredient in the manufacturing of Whiskey and only a little rye is added to the liquor to add flavour.
